The team is the heartbeat of Billy’s. We aim to make every visit as special as the last whether it be a birthday party or a first date, a glass of wine or a night on the cocktails. The team will accommodate for your every need to give you “Great Food, Great Drinks, Great Times’.

Main Staff


Harry Knighton
Harry took over Billy’s in October 2012 and has imposed the changes that you see today. With 15 years bar experience, his C.V. reads from nightclubs in Southampton to pubs and cocktail bars in St. Albans. From St. Albans originally, but don’t hold that against him, Harry has plans to rejuvenate Billy’s back to its heyday through the development of its people and products.

Stewart Andrews
General Manager
Stuart has been with Billy’s for going on 14 years now starting as a bartender and working his way up to manager. What Stuart doesn’t know about Billy’s isn’t worth knowing! An avid Liverpool fan, Stuart is often found in the bar either serving our guests or joining them for a drink in his time off, such is his friendship base of the regulars.

Rachel Baynes
Restaurant Manager
Rachel is the social butterfly of the team. After 3 years at Billy’s she is in charge of organising all parties, events and media. If you have had a party or been to an event at Billy’s it would have been Rachel who organised and decorated it. She also runs our social media accounts. In her free time she can be found in search of the ultimate heels!

James Gallivan
Bar Manager
James started at Billy’s whist he was at college and over the 3 years has moved his way up to manager. James has the responsibility of looking over the bar and is in charge of staffing, training and standards. When away from work James is usually found watching Arsenal (and moaning about them) or at the gym working on his “Guns”.
